Recipe: Breakfast Scramble

Let’s talk Breakfast. I have a lot of early mornings, so I like to have breakfast prepped so all I have to do is throw it in the microwave. I like to make these Breakfast Egg Scrambles. There is no recipe for these. It’s usually a Sunday veggie refrigerator clean out that gets thrown in it. This week I had a couple zucchinis and onion thrown in. But I’ve thrown in spinach, kale, other veggies and breakfast sausage before. It’s really whatever you like and want.

I use 18 eggs and blend it with a 1/4 cup of heavy whipping cream and a splash of Coconut Aminos, which gives the egg mixture a nice savory flavor. I cook the scramble to just when the eggs are setting up. If you cook them fully through, when you warm them up, they dry out. No one likes dried out, overcooked scrambled eggs. I use 18 eggs which gives me 6 servings (3ish eggs per bowl). You can use egg whites or egg beaters for these as well if you need something different for your lifestyle.
